Pastel de Nata


My 1st time to Lisbon, was so excited when my bros and I found the Pastel de Nata. We heard that it is from Portugal but never thought that we could find it in Lisbon!!

A slice of heaven created by nuns in the 18th century at a monastery just outside Lisbon.

I have a trip to Macao again in Feb for Photography, hope to taste it again in Macao.

How to Make Kimchi


Just back from Camping, Luigi brought some Kimchi to share. Thinking to have Kimchi if I am boring and looking for FOOD!!!
So, I think I'll learn how to do it, so I can DIY and share to friends...
Here we go! Watching and Learning Time....

Ingredients:
- 2 whole Napa Cabbage
- 1 Cup of Salt
-10 Cups of Water
- 7 Tbsp of Anchovy Sauce or Fish Sauce
- 1 1/4 Cup of Crushed Red Pepper
- 8 Pieces of Green Onion
- 1/2 of a Radish
- 1 Whole Garlic
- 1 Piece of Ginger
- 1/2 of an Onion
- 1/2 of an Apple
- 1/2 of an Apple Pear
- 4 Tbsp of Sugar

- Slice Napa Cabbage into bite size pieces and put into a large bowl.
- Mix water and salt together and pour over cabbage.
- Let the cabbage sit for 2 hours.
- In a blender, combine the garlic, onion, apple, apple pear, and ginger together. Puree.
- Julienne the Radish and thinly slice the Green Onions.
- After 2 hours rinse the cabbage in cold water about 3 times.
- Combine all the ingredients together in a large bowl. (Rubber gloves recommended)

- Store the kimchi in room temperature over night and then keep in the refrigerator.

Cooking "Drunken Shrimp"

One of my Fave Food, also Good to Perform in front of Friends Gathering Dinner at Home.
My Silly Sis and I, cooking the Drunken Shirmp at Home......supposed to put the Rose Wine + Chinese Wine into the Shrimp for a While but we stayed them for One Night....so....Everyone was so Drunk after eating the "Drunken Shrimp", couldn't finish the Whole Dinner....hmmmm

How To Make Goat Cheese

I don't eat Lamb but I love Goat Cheese ;-)
No matter, Chèvre or Chèvre Chaud from France, Caprino from Italy or Rubing from China, I like them ALL.
This Super-Easy Recipe for Goat Cheese seemed too good to be True. No backyard Goats required? Norennet? (The animal enzymes usually required for Cheese Production.) No help from an older, wiser dairy farmer?
Nope. It's almost as Easy as Making a pot of Tea. Except you also need Cheesecloth and One other maybe-you-don't-have-this-lying-around-thing: a Candy Thermometer. But that's really it. In less than two hours, you'll have a little pouch of soft, Fresh Goat Cheese ;-)
Ingredients
1/4 cup freshly squeezed lemon juice
1/2 clove freshly grated garlic
A few pinches coarse salt
Herbs (up to you) but recommended: Rosemary, chives, parsley, herbs de Provence, fennel fronds, dill, and other non-herbs like dried apricots.


Procedures
(1) Fill a medium saucepan with goat's milk. Heat gradually until it reaches 180°F. Watch closely. You can run in and out of the kitchen, but don't get too distracted. It shouldn't take more than about 15 minutes.
(2) Once it hits the magical temperature, remove from heat and stir in lemon juice. Let stand until milk starts to curdle, about 20 seconds. Don't expect curdles, like cottage cheese curdles. As you can see in this photo, slight clumping will occur, but nothing too drastic. Don't go pouring in a bucket of lemon juice, thinking nothing has happened. But you can add a few extra droplets if nothing is actually happening. Also: blood orange isn't as effective as lemon in creating the right curd texture, just sayin'.
(3) Line a colander with several layers of cheesecloth—really, several. Otherwise you'll lose precious goat cheese through the soggy cloth. Place over a large bowl to catch the whey drips.
(4) Ladle milk into colander. Pull up and tie the four corners of the cheesecloth together and hang on the handle of a wooden spoon. (This was my favorite part, second to eating it of course.) Set over a very deep bowl.
(5) Allow whey to drain (drip, drip, drip) until a soft, ricotta-like consistency is reached inside the cloth, about 1 to 1.5 hours.
(6) Transfer to a bowl and fold in salt, garlic, and flavors of your choice. Serve on fresh bread, salads, with fruit, or just straight-up. Can be stored in an airtight container in the fridge, but after a few days, the consistency isn't as lusciously smooth and spreadable.
(7) Eat it on everything.

Italian Spaghetti Bolognese Recipe

I made the Veggi one Last Week which is very Simple but I made it with my own Tomato Sauce from Fresh Tomatoes. The tomatoes from Mainland is not juicy as the Imported One, you may aware that you need to buy more portion. I applied 13 tomatoes (HK$14) + 1 Onion (HK$2) + 1/4 Garlic (HK$1) for 3 dishes of Pasta Sauce.....
.....Voluntary Simplifier - which Essentially means opting for a less materialistic life. However, it doesn't mean that I don't spend, it means I buy less Qty but High Quality Product, just found a High Quality Hiking Shoes so I may get the Pairs..
OK, Check Jenny's Homemade Tomato Sauce, only half way, hehe..
Coming week will be making Italian Spaghetti Bolognese..will update later....xx

Black Sugar


I was trying to refill the Sugar cooking for my Masala Tea. When I was in the wet market, I found there is so many different sugar and I remember someone told me about Black Sugar while visiting Cambodia last year...
Black sugar is healthier and more tasty than white processed sugar; brown sugar has a few of the benefits of black sugar, but really isn't as good.
It can look quite similar to brown sugar, but black sugar is even darker - almost black. Black sugar is popular in Taiwan. Compared to processed sugar, which has a very flat, characterless taste, black sugar is 'round', with a lot more flavor.
Unlike processed sugar, black sugar contains molasses, plus potassium, iron, calcium and other minerals.
Many Western women like to eat chocolate for comfort during their period, but Japanese women like to eat black sugar. For Taiwanese women, eating black sugar during their period is also a very common custom, probably because Taiwan is a former colony of Japan. They really eat pieces of sugar like it's candy.
Actually, the minerals like iron and calcium do help ease the tension and discomfort of a woman's period. Of course the calories of the black sugar do produce a lot of energy for this difficult time too.
Compare it to a cup of hot chocolate on a winter's day. Ginger and black sugar tea is a popular drink in almost every part of China. Apart from warming up the body, ginger tea also helps to cure colds.
Similar to sea salt or rock salt, black sugar is also a relatively alkaline ingredient. Instead of using processed salt or sugar, it will give our health more nutritional benefits.
If I need to add any sugar to my Milo, hehe, I would rather choose black sugar than processed sugar NOW..
